Time for some Seafood

My wife absolutely loves to go to the beach, but doesn’t like seafood too much. Her mom, on the other hand, is all about some lobster or other types of seafood. When one of her brothers used to come home from the east coast he would always bring two lobsters so he and his mom could eat together. My wife and her Dad would abandon the seafood smell filled house to go to Ruby Tuesday’s or something like that.
I love Cook off contests. I love that just about anyone can win. You could be a relative new comer to the field and still win simply because your recipe tasted the best out of all the ones at the cook off.
If I had to pick a favorite seafood dish I would stick with something simple like fried fish. I’m not too knowledgable on the different types, but we live in the south so frying anything makes it better. I’d like to give cajun spices a try some time. We’ve got some great cajun restaurants around here and the spices really kick it up a notch. If I were entering in a contest it would be something like that — a simple fried fish dish with a cajun kick. I’d enter it in the Great American Seafood Cook Off.
Another cool thing about the cook off is they encourage sustainable practices. That is, not overfishing a population, and using local products whenever possible. It’s a simple concept, but a tough one to stick with. If we want to have fish in the future, we need to let some of them live today. Very basic, but we humans tend to have a problem with basic things…
